Power Banana Chocolate Chip Muffins
These are amazing and delicious muffins full of protein and great for those who want to eat clean, be healthy and still enjoy delicious treats.
I love the “Power Cake” mix from Kodiac. It is great to make waffles, pankaces and muffins without using fake and sugary mixes. Enjoy!
Ingredients
2 cups of “Power Cake” Mix by Kodiak Cakes
1 cup milk (you can choose coconut or almond milk if you like)
1 egg (organic, free range)
½ cup organic brown sugar
¼ cup organic softened butter (not melted)
2 ripe bananas (you can add one banana, if you prefer a “less” sweet muffin)
2 drops of Cinnamon Essential Oil* or 1 teaspoon of cinnamon
1 cup of organic dark chocolate chips
Optional 1 cup of chopped walnuts
Directions
Combine all ingredients in a mixing bowl and blend until smooth. Fill muffin cups ¾ full.
Bake at 350 F for 14-18 minutes or until golden brown. Insert toothpick and make sure it comes out slightly moist. Makes 12 muffins.
